- 1 tablespoon coconut oil or shortening
- freeze-dried raspberries or crushed graham crackers for garnish (optional)
Instructions
- Cheesecake Mixture: In a medium bowl, beat the softened cream cheese until smooth. Add the raspberry preserves and vanilla extract, and mix until fully combined. Stir in the graham cracker crumbs until a thick, scoopable dough forms.
- Chill: Refrigerate the mixture for 30 minutes to firm up.
- Shape: Once chilled, scoop and roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Freeze for 20–30 minutes until firm.
- Coating: In a microwave-safe bowl, melt the white chocolate with the coconut oil in 30-second intervals, stirring until smooth. Dip each chilled ball into the melted white chocolate using a fork, tapping off any excess. Place them back on the baking sheet and immediately sprinkle with crushed freeze-dried raspberries or graham crackers if using. Refrigerate until set.
