- 1/2 cup freshly shredded mozzarella cheese (plus more for serving)
- 1/4 cup freshly grated Parmesan cheese (plus more for serving)
- Fresh flat-leaf parsley (finely chopped, optional, for garnish)

- Prepare Ingredients: Preheat your oven to 425℉ and move a rack to the upper third. Dice the onion, mince the garlic, slice the turkey sausage into 1/2-inch coins, drain and rinse the white beans, chop the spinach coarsely, and grate the mozzarella and Parmesan cheeses. Preparation upfront makes the cooking process smooth and quick.
- Cook Onion, Garlic, and Sausage: Heat olive oil in a large oven-safe skillet (preferably a deep 12-inch cast-iron skillet) over medium-high heat. Add diced onion and sauté until transparent and golden, about 5-7 minutes, stirring frequently. Add garlic and cook for an additional 30 seconds. Then add the turkey sausage coins and cook until lightly browned, about 3-4 minutes.
- Add Remaining Ingredients: Stir in chicken stock, undrained fire-roasted diced tomatoes, dried oregano, dried parsley flakes, garlic powder, paprika, white beans, uncooked gnocchi (break apart any clusters), and chopped baby spinach. Season generously with salt and pepper to taste, then stir until well combined. Sprinkle the shredded mozzarella and grated Parmesan evenly on top.
