Description

Instructions

  1. Prepare the vegetables and herbs: Shred the carrots and purple cabbage, thinly slice the red bell pepper, julienne the cucumber, and gather the fresh mint, basil, and cilantro leaves. Set up a clean work surface along with a shallow dish filled with warm water for softening the rice paper wrappers.
  2. Soften the rice paper wrappers: Dip one rice paper wrapper into the warm water for 5 to 10 seconds until it softens slightly but is still pliable. Lay it flat on a damp surface or plate to prevent sticking.
  3. Assemble the rolls: In the center of the softened wrapper, layer a small amount of the cooked rice noodles if using, followed by shredded carrots, bell pepper, cabbage, cucumber, and a few leaves of each fresh herb. Be careful not to overfill to ensure easy rolling.
  4. Roll the spring rolls: Fold the sides of the wrapper inward over the filling, then roll tightly from the bottom up, similar to a burrito, sealing all the ingredients inside. Repeat this process with the remaining wrappers and fillings.
  5. Serve fresh: Arrange the spring rolls on a plate without letting them touch to prevent sticking. Serve immediately with your favorite dipping sauces like peanut, hoisin, or sweet chili sauce for a delicious accompaniment.
