  • 4 cups vegetable broth

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add chopped onion and garlic. Cook for 3–4 minutes until softened and fragrant.
  2. Add Vegetables: Stir in carrots, celery, and zucchini. Cook for another 5 minutes to begin softening the vegetables.
  3. Add Broth and Seasoning: Pour in diced tomatoes (with juices), vegetable broth, and Italian seasoning. Stir to combine.
  4. Simmer: Bring the soup to a boil, then reduce the heat and let simmer for 20–25 minutes until the vegetables are tender.
