Dough:
- ¾ cup warm milk (110°F)
- ¼ cup granulated sugar
- 2¼ teaspoons active dry yeast (1 packet)
- 2 large eggs
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 3 tablespoons unsalted butter (softened)
- 3½ cups all-purpose flour (plus more for dusting)

Instructions
- Prepare the Dough: Combine warm milk and sugar in a large bowl. Sprinkle yeast over the top and let it sit until foamy. Add eggs, salt, vanilla, and butter. Mix in flour until a soft dough forms.
- Knead and Rise: Knead the dough on a floured surface until smooth. Let it rise until doubled in size.
- Cut and Rest: Roll out the dough and cut into squares. Let them rest for 30 minutes.
- Fry: Heat oil to 350°F. Fry beignets until golden brown and puffed.
- Serve: Drain, dust with powdered sugar, and serve warm.
