  • ¼ cup granulated sugar
  • 2¼ teaspoons active dry yeast (1 packet)
  • 2 large eggs
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsalted butter (softened)
  • 3½ cups all-purpose flour (plus more for dusting)

Additional:

  • vegetable oil (for frying)
  • powdered sugar (for dusting)

Instructions

  1. Prepare the Dough: Combine warm milk and sugar in a large bowl. Sprinkle yeast over the top and let it sit until foamy. Add eggs, salt, vanilla, and butter. Mix in flour until a soft dough forms.
  2. Knead and Rise: Knead the dough on a floured surface until smooth. Let it rise until doubled in size.
  3. Cut and Rest: Roll out the dough and cut into squares. Let them rest for 30 minutes.
  4. Fry: Heat oil to 350°F. Fry beignets until golden brown and puffed.
  5. Serve: Drain, dust with powdered sugar, and serve warm.
