Instructions

  1. Season the chicken: Pat the chicken breasts dry and season both sides evenly with salt, black pepper, and garlic powder to enhance the flavor.
  2. Sear the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5–6 minutes on each side until golden brown and fully cooked through. Remove the chicken from the skillet and set aside to keep warm.
  3. Sauté garlic and tomatoes: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then add the cherry tomatoes and sliced sun-dried tomatoes, cooking for 2–3 minutes while stirring often to combine flavors.
  4. Prepare the creamy sauce: Pour in the heavy cream and chicken broth, then stir in the grated Parmesan cheese and Italian seasoning. Allow the sauce to simmer gently for 3–4 minutes until it thickens slightly.
  5. Add spinach and return chicken: Add the baby spinach to the sauce and cook until wilted. Return the seared chicken breasts to the skillet and spoon the sauce over them. Simmer for an additional 2–3 minutes to heat the chicken through and meld the flavors.
  6. Garnish and serve: Remove from heat, garnish with fresh basil or parsley if desired, and serve the Tuscan chicken hot alongside your choice of pasta, mashed potatoes, or crusty bread.
