Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C). Wash and pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 40–45 minutes until tender.
- Prepare the turkey mixture: In a skillet, heat olive oil over medium heat. Add onion and cook until softened. Add garlic, then stir in the ground turkey, cooking until browned. Add chili powder, cumin, paprika, oregano, salt, and pepper. Pour in tomato sauce and water, simmer for 5 minutes.
- Stuff the sweet potatoes: Slice open the cooked sweet potatoes, fluff the insides, and spoon the turkey mixture into each potato. Top with cheese, cilantro, avocado, and yogurt or sour cream.
