Instructions
- Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean and pierce each several times with a fork to allow steam to escape during roasting. Place them on a baking sheet and roast for 45 to 50 minutes until they are tender all the way through.
- Prepare the Taco Turkey Filling: While the sweet potatoes roast, heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for 3 to 4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant. Add the ground turkey, breaking it apart with a spoon as it cooks, and brown until fully cooked through. Stir in the taco seasoning, tomato sauce or salsa, and season with salt and pepper. Let the mixture simmer for 5 minutes. If using, fold in black beans and corn to heat through.
- Assemble the Stuffed Potatoes: Once the sweet potatoes are roasted and tender, remove them from the oven and allow to cool slightly. Slice each potato open lengthwise and fluff the flesh gently with a fork. Spoon the prepared turkey taco filling over each potato evenly.
- Melt the Cheese: Top each stuffed sweet potato with shredded cheese. Return them to the oven for about 5 minutes, or until the cheese is melted and bubbly.
- Serve and Garnish: Remove the stuffed sweet potatoes from the oven and top with chopped cilantro, slices of avocado, a dollop of sour cream, or a squeeze of lime juice as desired. Serve hot and enjoy!
