Description

These Turkey Taco Stuffed Sweet Potatoes combine the natural sweetness of roasted sweet potatoes with a savory ground turkey taco filling. Topped with melted cheese and fresh garnishes like cilantro and avocado, this gluten-free main course is perfect for a healthy and flavorful meal prep or taco night.

Ingredients

Scale

Sweet Potatoes

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil

Taco Turkey Filling

  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • ¼ cup tomato sauce or salsa
  • Salt and pepper, to taste
  • ½ cup black beans (optional)
  • ½ cup corn (optional)

Toppings

  • ½ cup shredded cheddar or Mexican blend cheese
  • Chopped cilantro
  • Avocado slices
  • Sour cream
  • Lime wedges

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean and pierce each several times with a fork to allow steam to escape during roasting. Place them on a baking sheet and roast for 45 to 50 minutes until they are tender all the way through.
  2. Prepare the Taco Turkey Filling: While the sweet potatoes roast, heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for 3 to 4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant. Add the ground turkey, breaking it apart with a spoon as it cooks, and brown until fully cooked through. Stir in the taco seasoning, tomato sauce or salsa, and season with salt and pepper. Let the mixture simmer for 5 minutes. If using, fold in black beans and corn to heat through.
  3. Assemble the Stuffed Potatoes: Once the sweet potatoes are roasted and tender, remove them from the oven and allow to cool slightly. Slice each potato open lengthwise and fluff the flesh gently with a fork. Spoon the prepared turkey taco filling over each potato evenly.
  4. Melt the Cheese: Top each stuffed sweet potato with shredded cheese. Return them to the oven for about 5 minutes, or until the cheese is melted and bubbly.
  5. Serve and Garnish: Remove the stuffed sweet potatoes from the oven and top with chopped cilantro, slices of avocado, a dollop of sour cream, or a squeeze of lime juice as desired. Serve hot and enjoy!

  • These stuffed sweet potatoes are great for meal prep; store them assembled in the refrigerator and simply reheat before serving.
  • Feel free to customize toppings to your preference, such as adding jalapeños for extra heat or using different types of beans.
  • Adjust the amount of taco seasoning to your taste preference, especially if you want a milder or spicier flavor.
