  • 1 large egg

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the roll-ups.
  2. Cook Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on a parchment-lined surface to cool, preventing sticking.
  3. Prepare Turkey Sauce: In a large skillet, heat the olive oil over medium heat. Add the ground turkey and diced onion, cooking until the turkey is no longer pink and the onion is soft, about 6–8 minutes. Add minced garlic and cook for an additional minute. Stir in the marinara sauce and Italian seasoning, seasoning with salt and pepper to taste. Let the sauce simmer for 5–10 minutes to meld the flavors.
  4. Make Cheese Mixture: In a bowl, combine the ricotta cheese, egg, and 1 cup of the shredded mozzarella cheese. Mix until smooth and well incorporated.
  5. Assemble Roll-Ups: Spread about 2 tablespoons of the ricotta cheese mixture evenly onto each lasagna noodle. Top with 2 tablespoons of the turkey marinara mixture. Carefully roll up each noodle and place it seam-side down in a greased 9×13-inch baking dish.
  6. Add Toppings and Bake: Pour the remaining marinara sauce over the rolled noodles. Sprinkle the top with the remaining 1 cup mozzarella cheese and the grated Parmesan cheese. Cover the dish with foil.

  9. Rest and Garnish: Allow the roll-ups to rest for 10 minutes before serving. Garnish with chopped fresh parsley if desired for a fresh, vibrant finish.
