Description

These Turkey Cranberry Pinwheels are a festive and easy-to-make appetizer featuring soft flour tortillas spread with a creamy cranberry and cream cheese mixture, layered with deli turkey, fresh greens, and optional nuts. Perfect for holiday gatherings or as a flavorful snack, they are quick to prepare and require no cooking.

Ingredients

Scale

Pinwheel Base

  • 4 large flour tortillas (10-inch)
  • 8 ounces cream cheese (softened)
  • 1/4 cup whole berry cranberry sauce
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon ground black pepper

Fillings

  • 8 ounces sliced deli turkey
  • 1 cup baby spinach or arugula
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Prepare the cream cheese mixture: In a medium bowl, combine the softened cream cheese, whole berry cranberry sauce, honey (or maple syrup), and ground black pepper. Mix thoroughly until smooth and well blended.
  2. Spread the mixture on tortillas: Lay the flour tortillas flat on a clean surface. Evenly spread a generous layer of the cranberry cream cheese mixture over each tortilla, covering the entire surface up to the edges.
  3. Add turkey and greens: Arrange sliced deli turkey evenly over the cream cheese layer on each tortilla. Top the turkey with a handful of baby spinach or arugula for freshness.
  4. Optional nut topping: Sprinkle chopped pecans or walnuts over the greens if using, adding a crunchy texture and nutty flavor.
  5. Roll the tortillas: Carefully but tightly roll up each tortilla into a log shape, ensuring the fillings stay inside as you roll.
  6. Chill to firm up: Wrap each rolled log tightly with plastic wrap and place them in the refrigerator for at least 30 minutes. This chilling step helps the pinwheels hold their shape when sliced.
  7. Slice and serve: After chilling, unwrap the rolls and slice each into approximately 1-inch thick pinwheels. Arrange the pinwheels on a platter and serve chilled or at room temperature.

Notes

  • Prepare up to 24 hours in advance and keep wrapped in the refrigerator for convenience.
  • For a flavor twist, substitute the cream cheese mixture with hummus or goat cheese.
  • These pinwheels make great holiday appetizers, lunchbox snacks, or party tray additions.
  • To keep the recipe nut-free, simply omit the chopped pecans or walnuts.
