Tomato Jam

  • 1 cup cherry tomatoes (halved) or diced ripe tomatoes
  • 1 tablespoon olive oil (for jam)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon fresh thyme or 1/4 teaspoon dried thyme

Instructions

  1. Toast the Baguette: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush them lightly with 1 tablespoon olive oil. Toast in the oven for 8 to 10 minutes until the slices are golden and crisp. While still warm, rub each slice with the cut side of the garlic clove to impart subtle flavor.
  2. Prepare the Tomato Jam: In a saucepan over medium heat, warm 1 tablespoon olive oil. Add the halved cherry tomatoes or diced ripe tomatoes, balsamic vinegar, honey or brown sugar, salt, black pepper, red pepper flakes if using, and thyme. Let the mixture simmer, stirring occasionally, until it thickens to a jam-like consistency, about 15 to 20 minutes. Remove from heat and allow it to cool slightly.
  3. Assemble the Bruschetta: Optionally spread each toasted baguette slice with a thin layer of soft goat cheese or cream cheese. Spoon a generous amount of the prepared tomato jam on top of each slice. Garnish with fresh basil leaves or microgreens for a fresh and colorful finish. Serve warm or at room temperature for the best taste experience.
