  • 2 tablespoons instant espresso powder
  • 1 tablespoon hot water

Filling:

  • 1/2 cup mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon coffee liqueur (optional)
  • unsweetened cocoa powder, for dusting

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Dissolve espresso powder: In a small bowl, dissolve the espresso powder in hot water and set aside to cool.
  3. Prepare cookie dough: Cream butter and sugar, beat in egg and vanilla. Whisk together flour, baking powder, and salt. Combine wet and dry ingredients, then mix in the espresso mixture.
  4. Bake cookies: Scoop dough onto baking sheet and bake for 10–12 minutes. Cool on a wire rack.
  5. Make filling: Beat mascarpone cheese, powdered sugar, and coffee liqueur until smooth.
  6. Assemble cookies: Spread filling on cookies and sandwich them. Dust with cocoa powder before serving.
