Description

A delicious Mediterranean-inspired tart featuring thinly sliced sweet potatoes, caramelised onions, and crumbled feta cheese on a flaky puff pastry base. This savory tart is perfect as a main course or appetizer and combines sweet and tangy flavors with a crispy, golden crust.

Ingredients

Scale

Pastry

  • 1 sheet puff pastry (thawed)

Filling

  • 1 large sweet potato (peeled and thinly sliced)
  • 2 tablespoons olive oil (divided)
  • 2 medium onions (thinly sliced)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • Salt and black pepper to taste

Optional

  • 1 egg (beaten, for egg wash)

Instructions

  1. Caramelise Onions: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. In a skillet over medium heat, heat 1 tablespoon olive oil. Add the thinly sliced onions and cook slowly for 10–15 minutes, stirring often, until they become golden and soft. Add balsamic vinegar and sugar, then cook for another 2–3 minutes to develop a rich, sweet flavor. Remove from heat and set aside.
  2. Prepare Sweet Potatoes: Toss the thinly sliced sweet potatoes with the remaining 1 tablespoon of olive oil, salt, and pepper to ensure they are well-coated and seasoned.
  3. Prepare Puff Pastry: Roll out the thawed puff pastry sheet onto the prepared baking sheet. Score a 1-inch border around the edge of the pastry carefully with a knife, ensuring not to cut all the way through. Prick the center of the pastry all over with a fork to prevent excessive puffing.
  4. Assemble the Tart: Evenly spread the caramelised onions over the center of the pastry, staying within the scored border. Layer the sweet potato slices on top in a slightly overlapping pattern to cover the onions. Sprinkle crumbled feta cheese and fresh thyme leaves evenly over the sweet potatoes. If using, brush the edges of the tart with the beaten egg to achieve a glossy, golden finish while baking.
  5. Bake the Tart: Place the tart in the preheated oven and bake for 25–30 minutes or until the pastry is golden brown, puffed, and the sweet potatoes are tender.
  6. Serve: Let the tart cool slightly before slicing. Serve warm or at room temperature. Optionally, drizzle with honey or top with a handful of fresh arugula for added freshness and flavor.

Notes

  • Great served warm or at room temperature.
  • You can add a drizzle of honey on top for a touch of sweetness.
  • A handful of fresh arugula adds a peppery contrast.
