Topping:

  • 2 medium ripe peaches, sliced
  • 1/4 cup apricot jam
  • 1 tablespoon water

Instructions

  1. Prepare the Crust: Preheat oven to 325°F (163°C). Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.
  2. Make the Filling: Beat cream cheese until smooth. Add sugar, vanilla, and eggs. Pour over crust and bake.
  3. Add Topping: Mix sour cream and powdered sugar, spread over baked cheesecake. Chill, then top with fruit.
  4. Glaze: Warm apricot jam with water, brush over fruit before serving.
