- 3 cloves garlic, minced
- 2 cups mushrooms, roughly chopped
- 1 cup fresh baby spinach, roughly chopped

- ¼ tsp black pepper, ground
Dairy and Cheese
- 8 ounces cream cheese, softened
- ⅔ cup mozzarella cheese, shredded
- ½ cup parmesan cheese, shredded
- ⅓ cup sour cream or plain Greek yogurt

- ½ tbsp parsley, finely chopped
- 2 tbsp sliced mushrooms (for garnish)
Instructions
- Preheat Oven: Set your oven to 400℉ to heat while you prepare the dip.
- Heat Oil: In a large frying pan over medium-high heat, warm ½ teaspoon of oil.
- Optional Mushroom Garnish: Sauté 2 tablespoons of the sliced mushrooms in the pan for 2-3 minutes until browned, then remove and set aside for garnish.
- Cook Sausage: Add the sausage with removed casing to the pan. Break it into small bite-sized pieces and sauté until it starts browning and is nearly cooked through, about 3-4 minutes.
- Sauté Garlic and Mushrooms: Stir in the minced garlic, remaining mushrooms, salt, and black pepper. Cook and stir until mushrooms soften, approximately 3-4 minutes.
- Cook Spinach: Add the spinach and cook until wilted and moisture evaporates, about 3-5 minutes. Remove from heat and allow the mixture to cool.
- Mix Cheeses: In a bowl, combine softened cream cheese, mozzarella, parmesan, and sour cream until evenly blended.
- Combine Mixture: Stir cooled mushroom and sausage mixture into the cheese blend until fully combined.
- Prepare for Baking: Transfer the dip to an oven-safe skillet or baking dish. Top with the reserved sautéed mushrooms if desired.
- Bake Covered: Cover the dish with foil and bake for 10-12 minutes until the dip bubbles.
- Bake Uncovered: Remove the foil and bake an additional 2-3 minutes until the top is lightly golden brown and edges start to crisp.
- Serve: Remove from oven and garnish with fresh parsley if using. Serve warm with toasted baguette, crackers, or vegetables for dipping.

- If using frozen spinach, thaw and drain excess water thoroughly before adding to avoid excess moisture.
