Instructions
- Make the street corn topping: In a bowl, combine the corn kernels, mayonnaise, sour cream, crumbled cotija cheese, lime juice, chili powder, minced garlic, and a pinch of salt. Stir until all ingredients are well incorporated. Set the topping aside or chill until ready to serve.
- Prepare the smash burger tacos: Heat a skillet or griddle over medium-high heat and lightly oil the surface. Take a small ball of ground beef (about 2–3 ounces) and place it directly onto the center of a tortilla. Season with salt and pepper. Place the tortilla beef-side down on the hot skillet, then use a spatula or burger press to smash the beef flat so it adheres firmly to the tortilla. Cook for 2–3 minutes until the beef forms a crust, then flip the tortilla so the beef side is facing up. Cook for another 1–2 minutes to warm the tortilla through. Remove from heat and repeat with remaining beef and tortillas.
- Assemble the tacos: Spoon a generous amount of the street corn topping onto each beef-tortilla. Garnish with additional cotija cheese, chopped cilantro, fresh lime juice, and optional hot sauce or jalapeño slices. Serve immediately while warm.
