Strawberry Syrup:
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1/2 cup water

- Ice cubes
- 2 cups club soda or sparkling water
- Fresh mint and extra strawberries for garnish (optional)
Instructions
- Prepare Strawberry Syrup: In a small saucepan, combine strawberries, sugar, lemon juice, and water. Simmer over medium heat for 5–7 minutes until strawberries soften and sugar dissolves. Remove from heat and cool slightly.
- Strain the Syrup: Use a fine mesh strainer to strain the mixture into a bowl, pressing to extract syrup. Discard solids and chill syrup.
- Serve: Fill a glass with ice, pour 2–3 tablespoons of syrup, and top with club soda. Stir gently and garnish with mint or strawberries.
