- 1 tablespoon rainbow sprinkles
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Prepare the dough: In a medium bowl, whisk together the flour, baking soda, and salt. In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until combined. Gradually mix in the dry ingredients until just incorporated. Gently fold in the strawberry jam, chopped Pop Tarts, and white chocolate chips.
- Bake the cookies: Scoop heaping tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10–12 minutes, or until the edges are lightly golden. Cool on baking sheets for 5 minutes before transferring to a wire rack.
- Make the glaze: Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies and top with sprinkles. Let glaze set before serving.
