Frosting:

  • 1 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 tablespoons strawberry puree
  • 1 tablespoon mango puree
  • 1 tablespoon lime juice
  • 12 teaspoons tequila (optional)

Instructions

  1. Preheat the oven and prepare the batter: Preheat the oven to 350°F (175°C). Mix the dry ingredients in one bowl and wet ingredients in another. Combine both mixtures and fold in the fruit.
  2. Bake the cupcakes: Divide the batter into liners and bake for 18–20 minutes until done. Cool completely.
  3. Make the frosting: Cream the butter, add sugar, fruit purees, lime juice, and tequila. Beat until fluffy.
  4. Decorate: Pipe the frosting onto the cupcakes and garnish as desired.
