Ingredients
Scale
For the crust:
- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
For the filling:
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup whipped topping (or homemade whipped cream)
For the strawberry crunch topping:
- 1/2 cup freeze-dried strawberries, crushed
- 1/2 cup Golden Oreos or vanilla sandwich cookies, crushed
- 2 tablespoons unsalted butter, melted
Instructions
- Prepare crust: Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until it resembles wet sand. Press this mixture firmly into the bottoms of a mini muffin pan lined with paper or silicone liners. Bake for 5–6 minutes and then allow to cool completely.
- Make the filling: In a medium bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, continuing to beat until creamy. Gently fold in the whipped topping until fully combined. Spoon or pipe the cheesecake filling onto the cooled crusts and smooth the tops evenly.
- Prepare the strawberry crunch topping: In a small bowl, combine the crushed freeze-dried strawberries, crushed Golden Oreos, and melted butter. Mix well to blend the flavors.
- Assemble and chill: Sprinkle the strawberry crunch mixture generously over each cheesecake bite. Refrigerate the assembled bites for at least 2 hours to set before serving.
Notes
- Store these cheesecake bites in the refrigerator for up to 3 days.
- For a no-bake option, skip baking the crust and chill the crust mixture in the mini muffin pan for 15 minutes before adding the filling.
- Use a mini muffin pan for small, bite-sized servings or a standard muffin pan if you prefer larger portions.
