Description
Strawberry Cheesecake Quesadillas are a delightful dessert featuring warm, crispy flour tortillas filled with a creamy blend of sweetened cream cheese and fresh, macerated strawberries. This easy-to-make treat is cooked on the stovetop until golden brown and served with optional powdered sugar, whipped cream, or chocolate sauce for an indulgent finish.
Ingredients
Scale
Filling
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
Quesadillas
- 4 large flour tortillas
- 2 tablespoons unsalted butter (for cooking)
Optional Toppings
- Powdered sugar for dusting
- Whipped cream
- Chocolate sauce
Instructions
- Prepare Cream Cheese Mixture: In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is smooth and creamy, ensuring there are no lumps.
- Macerate Strawberries: In a separate small bowl, toss the sliced strawberries with the granulated sugar. Let them sit for 5 to 10 minutes so they release their juices and become sweetened.
- Assemble Quesadillas: Spread the cream cheese mixture evenly over half of each flour tortilla. Layer the sugared strawberries on top of the cream cheese, then carefully fold each tortilla in half to form a half-moon shape.
- Cook Quesadillas: Heat 1/2 tablespoon of butter in a skillet over medium heat. Place each quesadilla in the skillet and cook for 2 to 3 minutes on each side, or until they turn golden brown and crispy. Add more butter as needed to prevent sticking and to achieve a nice crust.
- Serving: Remove the cooked quesadillas from the pan and let them cool slightly. Slice each quesadilla into wedges, dust with powdered sugar if desired, and serve with whipped cream or a drizzle of chocolate sauce for extra indulgence.
Notes
- If fresh strawberries aren’t available, you can substitute with frozen strawberries; just thaw and drain them well before use.
- For a flavor twist, consider adding mini chocolate chips or a sprinkle of cinnamon inside the quesadilla before cooking.
