Cookies:

Instructions
- Cheesecake Filling: In a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth. Scoop teaspoon-sized amounts of the cheesecake mixture onto a parchment-lined baking sheet and freeze for 30 minutes.
- Cookies: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients. Fold in crushed freeze-dried strawberries and white chocolate chips.
- Scoop about 2 tablespoons of cookie dough, flatten it in your palm, and place a frozen cheesecake filling ball in the center. Wrap the dough around the filling and roll into a ball. Place on a parchment-lined baking sheet and repeat with remaining dough. Chill the filled cookie dough balls for 20–30 minutes.
- Preheat oven to 350°F. Bake the cookies for 12–14 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
