For the crust:

Instructions
- Prepare the crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture is well blended. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 8 to 10 minutes, then remove from oven and allow to cool slightly.
- Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sugar and vanilla extract and continue mixing. Bake for 50 to 60 minutes, or until the center is set but still slightly jiggly when gently shaken. - Chill the cheesecake: Remove the cheesecake from the oven and refrigerate for at least 4 hours or preferably overnight to allow it to set fully.
- Prepare the strawberry topping: In a bowl, toss the sliced strawberries with the sugar and lemon juice. Let them sit for 10 to 15 minutes until they release their juices and become juicy.
