Peppercorn Cream Sauce:

- 1 tablespoon olive oil
- 1/3 cup cognac or brandy
- 3/4 cup heavy cream
- 1 teaspoon Dijon mustard (optional)
- Chopped fresh parsley for garnish (optional)
Instructions
- Prepare the Steaks: Pat the steaks dry, season with salt, press crushed peppercorns onto steaks.
- Sear the Steaks: Sear steaks in a skillet, then transfer to a plate and tent with foil.
- Make the Sauce: Deglaze the pan with cognac, add cream, and mustard if desired. Simmer until thickened.
- Finish and Serve: Return steaks to the pan, coat with sauce, and garnish with parsley. Serve hot.
