  • 1 ripe banana
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and prepare a muffin tin with liners or by greasing it lightly.
  2. Blend Ingredients: In a blender or food processor, blend oats, eggs, Greek yogurt, spinach, honey, banana, vanilla, baking powder, baking soda, and salt until smooth.

  5. Bake: Bake for 18–20 minutes until a toothpick inserted in the center comes out clean.
