Salmon Burger Patties

  • 1 lb fresh salmon (skinless, finely chopped or pulsed in a food processor)
  • ½ cup cooked spinach (chopped and squeezed dry)
  • â…“ cup crumbled feta cheese
  • 1 egg
  • 2 tablespoons breadcrumbs (or almond flour for gluten-free)
  • 1 clove garlic (minced)
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped dill or parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil for cooking

Instructions

  1. Combine Ingredients: In a large bowl, combine the finely chopped or processed salmon, cooked and squeezed dry spinach, crumbled feta cheese, egg, breadcrumbs, minced garlic, lemon juice, chopped dill or parsley, salt, and black pepper. Mix gently until just combined to avoid breaking the salmon down too much.
  2. Form Patties: Shape the mixture into 3 to 4 equal-sized patties, being careful not to compress them too tightly.
  3. Chill Patties: Place the patties in the refrigerator and chill for 15–20 minutes to help them hold their shape during cooking.
  4. Heat Skillet: Preheat a nonstick skillet over medium heat and add a small amount of olive oil to prevent sticking.
  5. Cook Patties: Cook the patties for 3 to 4 minutes on each side, until they are golden brown and cooked through. Flip them carefully to keep the patties intact.
  6. Serve: Serve the salmon burgers warm on burger buns or lettuce wraps with your choice of sliced cucumber, tomato, red onion, and a dollop of tzatziki or yogurt sauce for a fresh finish.

Notes

  • Be sure to squeeze out all moisture from the cooked spinach to prevent soggy patties.
