Ingredients
Scale
Egg Mixture
- 2 large eggs
- 1 tablespoon milk or water
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Fillings
- 1 teaspoon olive oil or butter
- 1/2 cup fresh spinach, chopped
- 2 tablespoons crumbled feta cheese
Wrap
- 1 large tortilla or wrap (10-inch)
Optional Toppings
- Diced tomato
- Red onion
- Hot sauce
Instructions
- Whisk Eggs: In a small bowl, whisk together the eggs, milk (or water), salt, and black pepper until well combined and slightly frothy.
- Sauté Spinach: Heat the olive oil or butter in a nonstick skillet over medium heat. Add the chopped spinach and sauté for 1 to 2 minutes until it wilts and becomes tender.
- Cook Eggs: Pour the egg mixture into the skillet with the spinach. Cook gently over medium heat, stirring occasionally, until the eggs are softly scrambled and cooked through but still moist.
- Add Feta: Remove the skillet from heat and fold in the crumbled feta cheese carefully, allowing it to warm slightly in the residual heat.
- Warm Tortilla: Warm the tortilla by placing it in a dry skillet for a few seconds on each side or microwaving it for about 10 seconds to make it pliable and easy to fold.
- Assemble Wrap: Spoon the scrambled egg and spinach mixture into the center of the warm tortilla. Add any optional toppings such as diced tomato, red onion, or hot sauce to your preference.
- Fold and Serve: Fold in the sides of the tortilla and roll it up tightly to enclose the filling. Serve immediately for a fresh warm breakfast, or wrap in foil for a convenient on-the-go meal.
Notes
- You can prep the egg and spinach filling ahead of time and reheat it quickly for a fast weekday breakfast wrap.
- Try swapping the feta cheese with goat cheese or cheddar for different flavors.
- Add cooked mushrooms or turkey sausage to the filling to vary the protein and texture.
