Instructions
- Create the Pickling Brine: In a medium saucepan, combine vinegar, water, sugar, salt, peppercorns, mustard seeds, red pepper flakes, garlic, and smoked paprika. Bring to a boil, then simmer for 3–4 minutes. Let the brine cool slightly.
- Prepare the Eggs: Place hard-boiled eggs, sliced onion, and jalapeños in a clean glass jar. Pour the warm brine over the eggs, ensuring they are fully submerged. Seal tightly and refrigerate for at least 3 days before enjoying.
