Soup:
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 4–5 jalapeños (seeded and chopped, leave some seeds for extra heat)
- 8 ounces cream cheese (cubed)
- 2 cups chicken broth
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 slices cooked bacon (chopped)
- 2 tablespoons chopped green onions (for garnish)
Grilled Cheese Dippers:
- 4 slices of bread
- 4 slices cheddar or American cheese
- 2 tablespoons butter (softened)
Instructions
- Soup: In a large pot, heat the butter and olive oil over medium heat. Add the chopped onion and jalapeños and cook for 5–6 minutes until softened. Stir in the garlic and cook for 1 minute more. Add the cream cheese and stir until melted. Pour in the chicken broth and milk, whisking until smooth. Add cheddar and Monterey Jack cheeses, smoked paprika, salt, and black pepper. Simmer for 10–15 minutes on low heat, stirring occasionally. Stir in the chopped bacon and taste to adjust seasoning. Keep warm on low heat.
- Grilled Cheese Dippers: To make the grilled cheese dippers, butter one side of each bread slice. Place cheese between two slices, buttered side out. Cook in a skillet over medium heat until golden and crispy, about 2–3 minutes per side. Cut into strips for dipping.
- Ladle the soup into bowls and top with green onions. Serve hot with grilled cheese dippers on the side.
Notes
- For a thicker soup, blend part of it with an immersion blender.
- Add a splash of hot sauce for extra heat.
- You can substitute turkey bacon or omit bacon for a vegetarian version (use veggie broth as well).
