Description

This Spicy Egg Fried Rice is a quick and flavorful stir-fry dish featuring fluffy cooked rice, scrambled eggs, and a kick of heat from red pepper flakes and chili paste. Perfect for a fast, satisfying meal, it combines savory soy sauce and aromatic spices with fresh green onions for vibrant color and freshness.

Ingredients

Scale

Main Ingredients

  • 2 cups cooked and cooled white rice
  • 3 large eggs, beaten
  • 2 tablespoons vegetable oil or canola oil, divided
  • 2 teaspoons soy sauce
  • 1 teaspoon red pepper flakes, or to taste
  • 1 teaspoon chili paste or sriracha paste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 2 green onions, thinly sliced, plus extra for garnish
  • 1/2 teaspoon sesame oil, optional

Instructions

  1. Scramble the Eggs: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beaten eggs and gently scramble them until just set. Transfer the scrambled eggs to a plate and set aside.
  2. Sauté Spices: Add the remaining 1 tablespoon of oil to the same pan. Stir in the red pepper flakes, garlic powder, and ground ginger. Cook for about 30 seconds until the spices become aromatic to release their flavors.
  3. Cook the Rice: Add the cooked and cooled rice to the pan. Break up any clumps with your spatula and stir-fry for 2 to 3 minutes until the rice is heated through and evenly coated with the spiced oil mixture.
  4. Add Flavorings: Pour in the soy sauce and chili or sriracha paste. Stir thoroughly to make sure the rice is coated evenly with the savory and spicy sauces.
  5. Combine Eggs and Rice: Return the scrambled eggs to the skillet. Mix them into the rice until well incorporated, distributing the eggs evenly.
  6. Finish with Green Onions: Stir in the thinly sliced green onions and, if using, drizzle the sesame oil over the rice. Remove the pan from heat to retain the fresh flavor of the scallions.
  7. Serve: Garnish with extra green onions on top for a fresh crunch and serve the spicy egg fried rice hot. Offer additional chili sauce on the side for those who prefer extra heat.

Notes

  • Use day-old rice that has been cooled for the best texture and to prevent clumping.
  • Adjust the amount of red pepper flakes and chili paste according to your preferred spice level.
  • Sesame oil is optional but adds a wonderful nutty aroma to finish the dish.
  • You can substitute white rice with brown rice for a healthier alternative.
  • For added protein or vegetables, consider adding cooked chicken, shrimp, peas, or diced carrots during the stir-fry.
