Instructions
- Marinate the Chicken: In a bowl, whisk together soy sauce, sriracha, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the bite-sized chicken pieces and toss until well coated. Let the chicken marinate for at least 15 minutes to absorb the flavors.

- Prepare the Yum Yum Sauce: In a small bowl, whisk together mayonnaise, ketchup, rice vinegar, garlic powder, sugar, paprika, and sriracha. Adjust the sriracha amount to your preferred spice level. Thin the sauce by slowly adding 1 to 2 tablespoons water until you reach a smooth, drizzling consistency.
- Assemble the Bowls: Divide the cooked jasmine or basmati rice evenly among four bowls. Top each bowl with the spicy chicken, shredded carrots, sliced cucumber, avocado slices, and chopped green onions.
