Ground Beef Mixture:
- 1 pound ground beef
- 2 tablespoons olive oil (divided)
- 1 small red bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne (optional)
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup corn (fresh, canned, or frozen)
- Juice of 1/2 lime
- 1/4 cup chopped cilantro
Optional Toppings:
- Sliced avocado
- Shredded cheese
- Sour cream
- Salsa
Instructions
- Prepare Sweet Potatoes: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook until golden and fork-tender. Set aside.
- Cook Ground Beef: In the same skillet, add the remaining olive oil and brown the ground beef. Drain excess grease if needed.
- Sauté Vegetables: Add onion, bell pepper, and garlic to the skillet. Sauté until softened.
- Season and Combine: Stir in cumin, chili powder, smoked paprika, salt, pepper, and cayenne. Return sweet potatoes to the skillet, add black beans and corn. Cook until heated through.
- Finish and Serve: Squeeze lime juice over the mixture, garnish with cilantro, and serve hot with optional toppings.
Notes
- For a low-carb version, use cauliflower instead of sweet potatoes.
- Ground turkey can be a substitute for beef.
