This Southwest Ground Beef and Sweet Potato Skillet is a flavorful and hearty one-pan meal that combines the earthy sweetness of sweet potatoes with savory ground beef and a blend of spices. Perfect for a quick and satisfying dinner.

Ground Beef Mixture:

  • 1 pound ground beef
  • 2 tablespoons olive oil (divided)
  • 1 small red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne (optional)
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup corn (fresh, canned, or frozen)
  • Juice of 1/2 lime
  • 1/4 cup chopped cilantro

Optional Toppings:

  • Sliced avocado
  • Shredded cheese
  • Sour cream
  • Salsa

Instructions

  1. Prepare Sweet Potatoes: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook until golden and fork-tender. Set aside.
  2. Cook Ground Beef: In the same skillet, add the remaining olive oil and brown the ground beef. Drain excess grease if needed.
  3. Sauté Vegetables: Add onion, bell pepper, and garlic to the skillet. Sauté until softened.
  4. Season and Combine: Stir in cumin, chili powder, smoked paprika, salt, pepper, and cayenne. Return sweet potatoes to the skillet, add black beans and corn. Cook until heated through.
  5. Finish and Serve: Squeeze lime juice over the mixture, garnish with cilantro, and serve hot with optional toppings.

Notes

  • For a low-carb version, use cauliflower instead of sweet potatoes.
  • Ground turkey can be a substitute for beef.
