Description

These Sour Cream and Onion Crispy Potatoes are a deliciously seasoned and oven-roasted side dish, featuring tender potatoes with a golden, crispy exterior. Tossed in aromatic garlic, onion, and dill spices, then finished with a creamy sour cream sauce and fresh chives, they make a perfect accompaniment to any meal.

Ingredients

Scale

Potatoes and Seasoning

  • 2 lbs baby potatoes or small Yukon gold potatoes (or any variety of your choice)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried dill (optional)
  • 1/4 tsp paprika
  • 1/2 tsp salt, plus more for garnish
  • 1/4 tsp freshly ground black pepper

Sauce and Garnish

  • 1/2 cup sour cream
  • 2 tbsp fresh chives, chopped (for garnish)
  • 1/2 cup grated Parmesan cheese (optional, for extra flavor)

Instructions

  1. Prepare the potatoes: Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and cut them into bite-sized pieces, approximately 1-inch chunks. Leaving the skins on adds extra texture and flavor to the dish.
  2. Season the potatoes: In a large mixing bowl, combine the cut potatoes with olive oil, garlic powder, onion powder, dried dill (if using), paprika, salt, and black pepper. Toss everything together until the potatoes are evenly coated with the seasoning.
  3. Roast the potatoes: Arrange the seasoned potatoes in a single layer on a baking sheet, making sure they are spaced apart to allow maximum crispiness. Roast in the preheated oven for 30 to 35 minutes, flipping the potatoes halfway through the cooking time to ensure even browning. You’ll know they’re done when the edges are golden brown and crispy.
  4. Make the sour cream sauce: While the potatoes are roasting, prepare the sauce by mixing the sour cream with a pinch of salt and pepper in a small bowl. For added flavor, optionally stir in some extra onion powder or fresh chopped chives.
  5. Finish and serve: Once the potatoes are crispy and golden, remove them from the oven and immediately drizzle the sour cream sauce over them. Garnish generously with fresh chives and sprinkle with grated Parmesan cheese if desired. Serve warm and enjoy this flavorful side dish!

Notes

  • You can use any variety of potatoes, but baby or Yukon gold potatoes work best for roasting and crispiness.
  • Be sure not to overcrowd the baking sheet to ensure the potatoes roast and crisp properly.
  • Parmesan cheese is optional but adds a wonderful savory depth to the dish.
  • Dill is optional but gives a subtle herbaceous note that complements the onion flavor beautifully.
  • Leftover potatoes are great for reheating in a skillet to restore their crispiness.
