Ingredients

For the cookies:

1/2 cup (1 stick) unsalted butter, softened, 1/2 cup granulated sugar, 1/2 cup packed brown sugar, 1 cup canned pumpkin puree, 1 large egg, 1 teaspoon vanilla extract, 2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1 1/2 teaspoons ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves

For the frosting:

4 ounces cream cheese, softened, 2 tablespoons unsalted butter, softened, 1 1/2 cups powdered sugar, 1/2 teaspoon vanilla extract, 1–2 teaspoons milk, as needed for consistency


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Make the cookie dough: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the pumpkin, egg, and vanilla extract and mix until smooth. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually mix the dry ingredients into the wet ingredients until combined.
  3. Bake the cookies: Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 12–14 minutes, or until the cookies are set and lightly golden on the bottoms. Let cool completely on wire racks.
  4. Make the frosting: Beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla extract and beat until creamy, adding milk 1 teaspoon at a time until the frosting reaches a spreadable consistency.
  5. Frost the cookies: Frost the cooled cookies with the cream cheese frosting and enjoy!
