Chicken:
- 1.5 lbs boneless skinless chicken breasts
Garlic Parmesan Sauce:
- 4 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/3 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Other:
- 4 to 6 sandwich rolls
- 1 tbsp olive oil
- Optional: 1/2 cup shredded mozzarella cheese
- Fresh basil or parsley, for garnish
Instructions
- Prepare Chicken: In the slow cooker, combine chicken breasts, minced garlic, Parmesan cheese, Italian seasoning, mayonnaise, lemon juice, salt, and pepper. Stir to coat chicken evenly.
- Cook: Cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender and easily shredded.
- Shred Chicken: Remove chicken and shred with two forks. Return shredded chicken to slow cooker and stir to combine with sauce.
- Toast Rolls: Lightly toast sandwich rolls with olive oil.
- Assemble: Assemble sandwiches by piling Parmesan garlic chicken on rolls, topping with shredded mozzarella if desired, and garnish with fresh basil or parsley.
- Serve: Serve warm.
