Ingredients
Scale
Corned Beef and Seasoning
- 1 (3–4 pound) corned beef brisket with spice packet
- 1 tablespoon whole grain mustard (optional)
- 1 tablespoon brown sugar
- 1/2 teaspoon black pepper
Liquids
- 4 cups low-sodium beef broth or water
Vegetables
- 4 medium carrots, peeled and cut into large chunks
- 3–4 medium potatoes, cut into quarters
- 1 small onion, cut into wedges
- 1/2 head green cabbage, cut into large wedges
Instructions
- Prepare Vegetables: Place the peeled and chunked carrots, quartered potatoes, and onion wedges in the bottom of your slow cooker to form a base for the meat.
- Prepare Corned Beef: Rinse the corned beef brisket under cold water to remove excess salt, then place it on top of the vegetables fat-side up.
- Add Seasonings: Sprinkle the included spice packet evenly over the corned beef. Add the whole grain mustard, brown sugar, and black pepper on top for enhanced flavor.
- Add Liquid: Pour the beef broth or water around the meat, ensuring it mostly covers the brisket without disturbing the seasoning on top.
- Slow Cook: Cover the slow cooker and cook on low heat for 8–9 hours, or on high heat for 4–5 hours for a quicker option.
- Add Cabbage: About 2 hours before the end of cooking, add the cabbage wedges on top of the corned beef. Replace the lid and finish cooking until the cabbage is tender and the beef is fork-tender.
- Rest and Serve: Remove the corned beef and let it rest for 10 minutes before slicing against the grain. Serve with the cooked vegetables and a spoonful of the flavorful cooking broth.
Notes
- For extra flavor, add a splash of apple cider vinegar or a bay leaf to the cooking liquid.
- Leftovers make delicious sandwiches or hash the next day.
- If your slow cooker is smaller, reduce the amount of vegetables slightly to ensure everything fits properly.
