Description

Shrimp Scampi Linguini is a classic Italian-American seafood pasta dish featuring tender large shrimp sautéed in a garlic butter sauce with white wine and lemon juice, tossed with perfectly al dente linguini, fresh parsley, and optional Parmesan cheese. This quick and flavorful meal combines zest and richness, making it perfect for a weeknight dinner or special occasion.

Ingredients

Scale

Pasta

  • 12 ounces linguini pasta

Shrimp and Sauce

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup dry white wine (or chicken broth)
  • 1 tablespoon lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

To Serve

  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguini and cook according to package directions until al dente. Drain, reserving 1/4 cup of the pasta water, and set pasta aside.
  2. Sauté the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook about 1-2 minutes per side until shrimp turn pink and are cooked through. Remove shrimp from skillet and set aside.
  3. Prepare the Sauce: In the same skillet, melt the butter. Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant but not browned.
  4. Deglaze and Simmer: Pour in the white wine and lemon juice, scraping any browned bits from the bottom of the skillet. Allow the mixture to simmer for 2-3 minutes to reduce slightly and concentrate flavors.
  5. Combine Ingredients: Return the cooked shrimp to the skillet. Add the cooked linguini and a splash of the reserved pasta water. Toss everything together until the pasta is evenly coated with the sauce.
  6. Season and Garnish: Season with salt and freshly ground black pepper to taste. Stir in chopped fresh parsley for brightness.
  7. Serve: Serve immediately, topped with grated Parmesan cheese if desired.
