For the Chicken:

  • 1 pound boneless, skinless chicken breasts (thinly sliced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (divided)
  • 1 tablespoon butter

For the Cabbage:

  • 4 cups green cabbage (thinly sliced)
  • 1 small onion (sliced)
  • 4 cloves garlic (minced)
  • 1/2 teaspoon paprika
  • 1 tablespoon soy sauce (or coconut aminos for gluten-free)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Season the Chicken: Season the sliced chicken with salt and pepper.
  2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes until golden and cooked through. Remove from the pan and set aside.
  3. Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil and the butter. Sauté the onion and garlic for 1 to 2 minutes until fragrant. Add the cabbage and paprika, and cook for 6 to 8 minutes until tender and slightly caramelized.
  4. Combine Ingredients: Return the chicken to the pan, add soy sauce and lemon juice, and stir everything together. Cook for another 2 minutes to warm through.
  5. Garnish and Serve: Remove from heat and garnish with chopped parsley. Serve hot.
