- 4 cups low-sodium chicken broth
- 1 (14.5-ounce) can diced tomatoes with juices
- 1/2 cup heavy cream
- 1 (9-ounce) package refrigerated cheese tortellini
- 2 cups fresh spinach, roughly chopped
- salt and black pepper to taste
For Garnish:
- grated Parmesan cheese
- fresh basil
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, about 6–8 minutes. Remove excess grease if needed.
- Add diced onion and sauté until softened, about 4–5 minutes. Stir in garlic, Italian seasoning, and red pepper flakes; cook for 1 minute.
- Pour in chicken broth and diced tomatoes. Bring to a boil, then simmer for 5–10 minutes. Stir in heavy cream and tortellini, cook for 5–7 minutes until tender.
- Add spinach and cook until wilted, about 1–2 minutes. Season with salt and pepper.
- Serve hot, garnished with Parmesan and fresh basil if desired.
Notes
- You can substitute kale for spinach or use frozen tortellini—just adjust cooking time accordingly.
- For a thicker soup, stir in a tablespoon of tomato paste while sautéing the onions.
