For Garnish:

  • grated Parmesan cheese
  • fresh basil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, about 6–8 minutes. Remove excess grease if needed.
  2. Add diced onion and sauté until softened, about 4–5 minutes. Stir in garlic, Italian seasoning, and red pepper flakes; cook for 1 minute.
  3. Pour in chicken broth and diced tomatoes. Bring to a boil, then simmer for 5–10 minutes. Stir in heavy cream and tortellini, cook for 5–7 minutes until tender.
  4. Add spinach and cook until wilted, about 1–2 minutes. Season with salt and pepper.
  5. Serve hot, garnished with Parmesan and fresh basil if desired.

  • You can substitute kale for spinach or use frozen tortellini—just adjust cooking time accordingly.
