- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 1 cup shredded Mexican cheese blend
- 1/4 cup chopped fresh cilantro (optional)
- Lime wedges for serving
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare the chicken: Rub the chicken breasts with olive oil and season with chili powder, cumin, garlic powder, paprika, salt, and pepper.
- Assemble: In a large oven-safe skillet or baking dish, place the seasoned chicken. Mix black beans, corn, and diced tomatoes in a bowl, then pour around the chicken.
- Bake: Cover with foil and bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F.
- Add cheese: Remove foil, sprinkle cheese over the chicken, and bake uncovered for 5 more minutes until melted.
- Serve: Garnish with cilantro and serve with lime wedges.
