Description

These Samoa Cookie Protein Balls are a delicious and nutritious snack inspired by the classic Samoa cookie flavors. Packed with oats, peanut butter, protein powder, and coated in rich dark chocolate with a sprinkle of shredded coconut, they offer a perfect balance of sweetness and protein to fuel your day.

Ingredients

Scale

Dry Ingredients

  • 1 cup old-fashioned oats
  • 1 cup vanilla protein powder
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup dark chocolate chips
  • Pinch of sea salt

Wet Ingredients

  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup

Instructions

  1. Mix Sticky Base: In a large mixing bowl, combine the oats, vanilla protein powder, creamy peanut butter, honey or maple syrup, and shredded coconut. Stir thoroughly until the mixture becomes sticky and well combined.
  2. Add Chocolate Chips and Salt: Gently fold in the dark chocolate chips and a pinch of sea salt, distributing them evenly throughout the mixture without breaking the chocolate chips.
  3. Form Balls: Using about 1 tablespoon of the mixture per ball, scoop and roll each portion into bite-sized balls with your hands for easy snacking.
  4. Chill: Place the rolled balls on a parchment-lined tray and refrigerate for 30 minutes to firm up and help them hold together.
  5. Melt Chocolate: While the protein balls chill, melt additional dark chocolate in a microwave or over a double boiler until smooth and runny for dipping.
  6. Dip and Decorate: Dip each chilled ball halfway into the melted dark chocolate, then sprinkle more shredded coconut on top while the chocolate is still warm.
  7. Cool Completely: Allow the dipped protein balls to cool and set completely on parchment paper at room temperature or in the refrigerator before serving.

Notes

  • Use honey or maple syrup depending on your preference for sweetness or dietary needs.
  • You can substitute peanut butter with almond or cashew butter if desired.
  • For a vegan option, ensure your protein powder is plant-based and use maple syrup instead of honey.
  • Store the protein balls in an airtight container in the refrigerator for up to one week.
  • Freezing is also possible for longer storage; thaw before eating.
  • If the mixture is too sticky to handle, chill it briefly before rolling.
