Instructions
- Mix Sticky Base: In a large mixing bowl, combine the oats, vanilla protein powder, creamy peanut butter, honey or maple syrup, and shredded coconut. Stir thoroughly until the mixture becomes sticky and well combined.
- Add Chocolate Chips and Salt: Gently fold in the dark chocolate chips and a pinch of sea salt, distributing them evenly throughout the mixture without breaking the chocolate chips.
- Form Balls: Using about 1 tablespoon of the mixture per ball, scoop and roll each portion into bite-sized balls with your hands for easy snacking.
- Chill: Place the rolled balls on a parchment-lined tray and refrigerate for 30 minutes to firm up and help them hold together.
- Melt Chocolate: While the protein balls chill, melt additional dark chocolate in a microwave or over a double boiler until smooth and runny for dipping.
- Dip and Decorate: Dip each chilled ball halfway into the melted dark chocolate, then sprinkle more shredded coconut on top while the chocolate is still warm.
- Cool Completely: Allow the dipped protein balls to cool and set completely on parchment paper at room temperature or in the refrigerator before serving.
