Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream the butter and sugars: In a large bowl, cream the softened butter, granulated sugar, honey, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Combine dry and wet ingredients: In a separate bowl, whisk together the dry ingredients. Gradually add them to the wet ingredients and mix until just combined. Fold in the chopped pistachios.
- Form and bake: Scoop tablespoon-sized portions of dough onto the baking sheets. Flatten slightly and bake for 10–12 minutes until lightly golden. Sprinkle with sea salt, if desired.
- Cool and enjoy: Let the cookies cool on the baking sheet before transferring to a wire rack.
