Instructions

  1. Roast the garlic: Preheat the oven to 400°F (200°C). Place the whole head of garlic on a piece of foil, drizzle with a bit of olive oil, then wrap tightly. Roast in the oven for 35–40 minutes until the garlic is soft and golden. Remove and allow to cool. Once cool, squeeze out the roasted garlic cloves and mash into a smooth paste.
  2. Season and sear the chicken: Season the chicken breasts with salt, pepper, dried thyme, and dried rosemary. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until golden brown.
  3. Roast the chicken: Transfer the skillet with the seared chicken to the preheated oven. Roast for 15–18 minutes until the chicken is cooked through. Remove the chicken from the skillet and tent with foil to keep warm.
  4. Make the Asiago gravy: Place the skillet back on the stovetop over medium heat. Melt butter in the pan drippings, then whisk in flour and cook for 1 minute to form a roux. Gradually add chicken broth while whisking to avoid lumps. Stir in heavy cream and the mashed roasted garlic paste. Let the mixture simmer for 3–4 minutes until thickened.
  5. Finish the gravy: Add freshly grated Asiago cheese to the gravy and stir until melted and smooth. Return the cooked chicken to the skillet and spoon the cheesy garlic gravy over the top.
  6. Garnish and serve: Garnish with chopped fresh parsley if desired. Serve warm, ideally alongside mashed potatoes, rice, or crusty bread to soak up the flavorful gravy.
