- ¼ teaspoon black pepper
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potatoes: In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, rosemary, paprika (if using), salt, and black pepper until evenly coated.
- Roast: Spread the potatoes in a single layer on the prepared baking sheet, cut side down for crispier edges. Roast for 25–30 minutes, flipping once halfway through, until golden brown and fork-tender.
- Garnish and serve: Remove from the oven, garnish with fresh parsley if desired, and serve hot.
Notes
- You can use baby gold, red, or purple potatoes.
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes, then pat dry before roasting.
