Asparagus:
- 1 bunch asparagus (trimmed)
Carrots:
- 4 large carrots (peeled and sliced on the diagonal)
Additional Ingredients:
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme or rosemary (optional)
- 1 tablespoon lemon juice or zest (optional for finishing)
Instructions
- Preheat the oven: Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Prepare the carrots: Place the sliced carrots on the baking sheet, drizzle with 1 tablespoon of olive oil, and season with half the salt, pepper, and garlic powder. Roast for 15 minutes.
- Add asparagus: Remove from the oven, add the asparagus, drizzle with the remaining tablespoon of olive oil, and season with the rest of the salt, pepper, and garlic powder. Toss gently to combine.
- Roast: Return the pan to the oven and roast for another 12–15 minutes until carrots are tender and asparagus is lightly browned.
- Finish and serve: Sprinkle with dried thyme or rosemary and lemon juice or zest if desired. Serve warm.
Notes
- For extra flavor, add grated Parmesan or a drizzle of balsamic glaze before serving.
