- 3 large russet potatoes cut into fries
- 2 tbsp olive oil for fries
- Salt and pepper to taste
Instructions
- Preheat the oven: Preheat oven to 425°F (220°C).
- Prepare the fries: Toss potato fries with olive oil, salt, and pepper; spread on a baking sheet. Bake for 25–30 minutes until golden and crisp, flipping halfway.
- Caramelize the onions: Heat butter and olive oil in a skillet. Add onions, sugar, thyme, salt, and pepper. Cook slowly until caramelized, about 20–25 minutes.
- Sear the steaks: Rub ribeye steaks with olive oil, salt, and pepper. Sear in a skillet for 4–5 minutes per side for medium-rare. Let rest 5 minutes.
- Serve: Serve steaks topped with caramelized onions alongside fries.
