  • 1 cup shredded sweetened coconut

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking dish by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Make the Crust: In a mixing bowl, combine the graham cracker crumbs with the melted unsalted butter. Mix until well blended, then firmly press this mixture into the bottom of the prepared baking dish to create an even crust layer.
  3. Add Rhubarb: Spread the chopped fresh rhubarb evenly over the graham cracker crust.
  4. Drizzle Condensed Milk: Pour the sweetened condensed milk evenly over the rhubarb layer, ensuring it covers the fruit completely.
  5. Top with Chocolate and Nuts: Sprinkle the white chocolate chips over the condensed milk layer, followed by the chopped walnuts if using, distributing them evenly.
  6. Add Coconut: Finish by spreading the shredded sweetened coconut evenly on top of all layers.
  7. Bake: Place the baking dish in the preheated oven and bake for 30 to 35 minutes. The bars are done when the edges turn golden and the center is set but still slightly soft.
  8. Cool and Serve: Remove the bars from the oven and allow them to cool completely in the pan. Once cooled, cut into 16 squares and serve.
