Description

This Red Pepper, Spinach, and Goat Cheese Frittata is a vibrant and nutritious dish perfect for breakfast, brunch, or a light dinner. Combining roasted red bell peppers, fresh spinach, and creamy goat cheese, this frittata is flavorful and easy to prepare using a stovetop-to-oven method, resulting in a fluffy and golden egg dish packed with wholesome vegetables and savory cheese.

Ingredients

Scale

Egg Mixture

  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)

Vegetables & Cheese

  • 1 red bell pepper, diced
  • 2 cups fresh spinach, chopped
  • 1 small onion, finely chopped
  • 1/2 cup crumbled goat cheese

Cooking

  • 2 tablespoons olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the frittata.
  2. Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, pepper, and oregano until well combined and slightly frothy.
  3. Sauté Vegetables: Heat olive oil in an oven-safe skillet over medium heat. Add the finely chopped onions and diced red bell pepper, cooking and stirring occasionally until they soften, about 5 minutes.
  4. Cook Spinach: Add the chopped spinach to the skillet and cook for about 2 minutes until wilted, mixing it with the other vegetables.
  5. Add Egg Mixture & Goat Cheese: Pour the prepared egg mixture evenly over the sautéed vegetables in the skillet. Sprinkle the crumbled goat cheese evenly on top of the eggs.
  6. Set Edges Stovetop: Cook the mixture on the stovetop without stirring for 3 to 4 minutes, allowing the edges to begin setting and firming up.
  7. Bake Frittata: Transfer the skillet carefully to the preheated oven and bake for 10 to 12 minutes, until the frittata is fully set, puffed slightly, and lightly golden on top.
  8. Serve: Remove the skillet from the oven, let the frittata cool slightly for a few minutes, then slice into portions and serve warm.

Notes

  • Use an oven-safe skillet such as cast iron or stainless steel to ensure safe transfer from stovetop to oven.
  • You can substitute goat cheese with feta or ricotta for a different flavor profile.
  • For extra flavor, add chopped fresh herbs like basil or parsley when serving.
  • Make sure not to stir after adding the egg mixture so the frittata sets properly.
