Description

For the Mascarpone Cream:

  • 1 ½ cups heavy cream
  • 8 oz mascarpone cheese (softened)
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Tiramisu Assembly:

  • 2 cups fresh raspberries (plus extra for garnish)
  • 2 tablespoons raspberry liqueur or Chambord (optional)
  • 24 ladyfinger cookies (savoiardi)
  • ¾ cup raspberry juice or cranberry-raspberry juice (for dipping)
  • 2 tablespoons raspberry jam (warmed)
  • White chocolate shavings (optional for topping)
  • Fresh mint (optional for garnish)

Instructions

  1. Prepare the Mascarpone Cream: In a large bowl, whip the heavy cream until soft peaks form. In a separate bowl, blend mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. Combine the Cream and Assemble: Gently fold the whipped cream into the mascarpone mixture until fully combined. Dip ladyfingers into the juice mixture and layer them in a dish. Spread half of the mascarpone mixture over the ladyfingers, then add raspberries, and drizzle with raspberry jam. Repeat layering.
  3. Chill and Serve: Chill the assembled tiramisu for at least 4 hours. Before serving, top with white chocolate shavings, fresh raspberries, and mint if desired.

Notes

  • You can substitute the raspberry liqueur with lemon juice for a non-alcoholic version.
  • This dessert can also be made in individual glasses for a fun presentation.
