- 8 oz mascarpone cheese (softened)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
For the Tiramisu Assembly:
- 2 cups fresh raspberries (plus extra for garnish)
- 2 tablespoons raspberry liqueur or Chambord (optional)
- 24 ladyfinger cookies (savoiardi)
- ¾ cup raspberry juice or cranberry-raspberry juice (for dipping)
- 2 tablespoons raspberry jam (warmed)
- White chocolate shavings (optional for topping)
- Fresh mint (optional for garnish)
Instructions
- Prepare the Mascarpone Cream: In a large bowl, whip the heavy cream until soft peaks form. In a separate bowl, blend mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Combine the Cream and Assemble: Gently fold the whipped cream into the mascarpone mixture until fully combined. Dip ladyfingers into the juice mixture and layer them in a dish. Spread half of the mascarpone mixture over the ladyfingers, then add raspberries, and drizzle with raspberry jam. Repeat layering.
- Chill and Serve: Chill the assembled tiramisu for at least 4 hours. Before serving, top with white chocolate shavings, fresh raspberries, and mint if desired.
Notes
- You can substitute the raspberry liqueur with lemon juice for a non-alcoholic version.
- This dessert can also be made in individual glasses for a fun presentation.
