Description

This Pumpkin French Toast recipe is a delightful twist on the classic breakfast favorite, combining creamy pumpkin puree and warm spices like cinnamon, nutmeg, and cloves for a perfect autumn-inspired meal. The toast is soaked in a rich custard mixture and cooked on a griddle until golden brown, then kept warm in the oven, resulting in a comforting, flavorful dish ideal for fall mornings.

Ingredients

Scale

Custard Mixture

  • 3/4 cup half and half
  • 1/2 cup pumpkin puree (canned or fresh)
  • 4 eggs
  • 2 1/2 Tbsp packed light-brown sugar
  • 1 1/2 tsp vanilla extract
  • 1 1/4 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves

Other Ingredients

  • 9 slices (1-inch thick) hearty white bread (such as rustic French bread or brioche)
  • Butter, for griddle

Instructions

  1. Preheat cooking equipment: Preheat your oven to 225 degrees Fahrenheit. Then, heat an electric griddle to 350 degrees. If you don’t have a griddle, a non-stick skillet over medium heat will work just as well.
  2. Prepare custard mixture: In a shallow dish, whisk together the pumpkin puree, eggs, brown sugar, vanilla extract, ground cinnamon, nutmeg, ground ginger, and cloves until the mixture is smooth and well combined. Gradually pour in the half and half and whisk again until fully blended.
  3. Soak the bread: Dip each slice of bread into the egg mixture, allowing it to absorb the custard on one side, then turn it over to soak the other side thoroughly.
  4. Cook the French toast: Butter the heated griddle where you will place the bread. Place the soaked slices on the griddle and cook until the bottoms are golden brown, which should take several minutes. Lift each slice, butter the griddle again, then flip to cook the other side until it is also golden brown.
  5. Keep warm in oven: Transfer the cooked French toast slices to the oven rack to keep warm for up to 10 minutes. This also ensures they cook through to the center properly if needed.
  6. Serve: Serve the Pumpkin French Toast warm, optionally accompanied by maple syrup or your favorite toppings.

Notes

  • Use hearty bread like rustic French bread or brioche for best texture and absorption.
  • To make the recipe dairy-free, substitute half and half and butter with non-dairy alternatives.
  • Keep cooked French toast in the oven on low heat to maintain warmth without overcooking.
  • Spices can be adjusted according to personal preference for more or less warmth.
  • Leftovers can be refrigerated and reheated gently in a skillet or oven for best results.
